🙌🏼A more optimal twist on the classic party favorite!

🍄‍🟫Ingredients
30 oz baby bella mushrooms (equals about 6 cups)
12 c spinach
3/4 c white onion, very finely diced
6 cloves garlic, minced
1.5 tbsp extra virgin olive oil
Salt
Pepper
3 servings grain free crackers
3 tbsp parmesan, grated
1 tbsp lemon juice
6 oz goat cheese

🤓Directions
-Preheat oven to 350 F.
-With a spoon, scoop out stems from the mushrooms and place the cored mushrooms on a baking sheet lined with parchment paper. You can save the stems in the fridge or freezer for future stir fries.
-Add spinach, onion, garlic, and olive oil to a pan over medium heat. Season with a few dashes of salt and pepper and cook until spinach is wilted. -Note: you may need to cook this in batches depending on the size of your pan.
-As spinach cooks, crush grain free crackers until very fine. It may help to use a food processor, though it is not necessary. 
-Stir in parmesan once crushed.
-If applicable, add all spinach back to the pan after cooked. Once the spinach is wilted, add in lemon juice and cook for an additional minute.
-Turn off heat and mix in goat cheese until melted and well combined. 
-Season to taste with salt and pepper.
-Spoon spinach mixture into the mushroom caps.
-Pick up each mushroom and dip into the crushed cracker mixture.
-Bake for 20-30 minutes or until mushrooms and topping are slightly golden brown.
