⬇️ the sugar bomb with these lower glycemic sugar cookies!

🍪Ingredients
2 c almond flour
¼ c coconut flour
⅓ c coconut sugar
¼ tsp salt
½ tsp baking soda
½ c grass fed butter, softened to room temperature
1 egg
1 tsp vanilla extract
Optional: ¼ tsp almond extract
Avocado oil cooking spray
❄️For the Icing
⅔ c powdered sugar
1 tbsp almond milk (or more as needed to create an icing)
Optional: organic food coloring 

📖Directions
Preheat oven to 350 F
-In a large bowl, mix almond flour, coconut flour, coconut sugar, salt, and baking soda.
-In a separate bowl, mix butter, egg, vanilla extract, and optional almond extract. 
-Pour liquid mixture into dry mixture and mix/knead to combine until a dough forms, avoiding overmixing.
-For best results, refrigerate dough for a few hours before rolling out. This will help cookies retain their shape.
-Roll out dough so it is about ¼” thick. Cut dough into desired shapes.Place parchment paper on a baking sheet and spray with avocado oil cooking spray. 
-Place cookies on baking sheet. For best results, freeze cookies for 10-20 minutes before baking to help them retain their shape. 
-Once ready, bake for about 10 minutes or until lightly golden. 
-While cookies are baking, mix icing ingredients and set aside. Allow cookies to cool after coming out of the fridge and have fun decorating!
