CLEAN YOUR DAMN PANS!

This carbon steel pan came from a high end restaurant in Princeton. My friend permanently borrowed it when he stopped working at that restaurant. 

Clearly it was never cleaned properly- most likely just wiped out with a towel. 

It’s ESSENTIAL that you clean off and remove any remaining cooking oil after you’re done using cast iron, carbon steel, or any pan for that matter. 

If that oil is left on there, there’s a good chance it’s going to get sticky before the next cook, and when you heat the pan up the next time you use it, that oil is going to start to harden, making it even harder to remove. 

Repeat that over and over again, you’ll end up with a crusty pan in no time. 

Don’t just clean the cooking surface. As you can see, oil will splatter on the handle, drip underneath the handle, spill over the sides of the pan, and make its way to the bottom.
