🥔 The Best Diner Style Breakfast Potatoes | I’m not a big breakfast guy during the week, but lately I’ve been into making breakfast on weekends. 

So I’m not necessarily sharing a recipe for these breakfast potatoes, and instead, the technique I use to make the best damn breakfast potatoes you’ll have. These potatoes are crispy on the outside, fluffy on the inside, and loaded with flavor! 

Just follow these steps and you’ll be golden… just like your potatoes! 

Step 1 - Peel and dice your potatoes to your size of choice.  I prefer small to medium dice

Step 2 - Add the diced potatoes to a pot, and cover with cold, salted water.

Step 3 - Bring the water to a boil, and cook the potatoes until they’re just fork tender (about 7 minutes)

Step 4 - Drain the potatoes, then add them back to the pot over medium heat to remove any excess moisture, shaking them up so get those crinkled edges. 

Step 5 - Heat a skillet over medium high heat, drizzle with olive oil and add 2 TB of butter.  Once the oil is hot and the butter is melted, add the potatoes

Step 6 - Toss the potatoes so they’re fully coated with the butter and oil.  Then let the potatoes cook, untouched, for 3 whole minutes. 

Step 7 - Continue cooking your potatoes. And in 3 minute intervals, continue tossing the potatoes until desired crispiness is achieved.  Add more olive oil and/or butter as needed.  You don’t want the pan to dry out.

Step 8 - About 5 to 6 minutes before the potatoes are done, season however you’d like.  Feel free to add peppers and onions, hot peppers, minced garlic, black garlic, a variety of spices or even fresh/dried herbs.  But the only ingredient that’s a must, is lots of salt. 

For these potatoes I did red bell pepper, yellow onion, fresh parsley, salt, pepper, and thespicehouse Great North Maple Garlic seasoning.
