🐰 Lent Ep. 7: Crispy Shrimp Piccata | don’t at me, but these shrimp cakes might be better than crab cakes 👀👀. 

But on a serious note, these shrimp cakes are straight 🔥. They’re tender, they’re crispy, they’re moist, and you’d never know they’re fully made of shrimp. 

Let me know if you’d rather have shrimp cakes or crab cakes! 

🦐 Shrimp Cakes 
1 lb shrimp, cleaned
1 egg whisked 
1/4 cup mayo 
1 tsp Dijon mustard 
1 lemon zested 
1/2 lemon juiced 
1 tbsp parsley, chopped
1/2 shallot, finely diced 
1 large garlic clove, grated 
1 tbsp oregano 
1/4 tsp red pepper flakes 
Salt & Pepper 
3/4 cup panko breadcrumbs to bind, plus more to coat (I used kooshy sourdough breadcrumbs) 
Oil for frying 

🍋 Piccata Sauce 
2 tbsp capers, rinsed
2 large garlic cloves, minced 
2/3 cup white wine
1/2 cup lemon juice 
1 cup veggie, fish, or chicken broth 
Parsley, finely chopped 
4 tbsp cold butter 

Roughly chop the shrimp in a food processor or with a knife. Then add the shrimp and all the shrimp cake ingredients to a bowl. Add the breadcrumbs and mix until combined, adding more breadcrumbs as needed until you can form cakes. 

Using additional breadcrumbs, coat each side of the shrimp cakes. Then transfer to the fridge for 15-29 minutes allowing them to set. 

Heat oil over medium heat, once hot, fry the shrimp cakes for 3-4 minutes per side. Then remove, and set aside on a paper towel lined dish. Immediately season with salt. 

Remove any excess oil from the pan and add the capers and garlic. Cook for a minutes and then deglaze with white wine. 

Cook until the wine reduces by half, and stir in the lemon juice and broth. Bring to a simmer, and let the sauce cook for 10 minutes until it reduces by half. Remove it from the heat, and stir in the cold butter and parsley. 

Plate a few spoonfuls of the piccata sauce on the bottom of a plate, then top with the shrimp cakes. Spoon a some more piccata sauce on top, and garnish with parsley.
