Looking for something new and different this holiday season? Explore a taste of New Zealand! Lamb is a wonderful alternative to more traditional red meats. It’s simple to cook and a great way to get creative in the kitchen and impress your guests this holiday season.

Silver Fern Farms restaurant-quality, 100% grass-fed lamb is naturally lean, and it cooks up deliciously sweet and tender.

Try this delicious recipe and create a new tradition for your family!

Ingredients

·2 packages (10 oz. each) Silver Fern Farms 100% Grass-Fed Lamb Medallions 
· Salt & pepper to taste
· 4 T butter
· ½ C flour or as needed
· 1 package (2 sheets) puff pastry, thawed
· 2 eggs, beaten
· Pinch of flaky garlic salt
· 1 (12 oz.) package baby bella mushrooms, sliced
· 3 shallots, minced
· 2 T balsamic vinegar

For the Lamb Wellington:

1. Season the lamb liberally with salt and pepper on each side.

2. Brown the lamb in a hot skillet with butter, cooking for 1-2 minutes per side.

3. Add the remaining butter to the same pan and add the mushrooms, sautéing until tender. Reduce the heat to medium low and add in the shallots to do the same. Stir in the balsamic vinegar and cook for 2-3 minutes longer

4. Preheat the oven to 375 degrees. Meanwhile, cut the puff pastry into 4 equal quadrants.

5. Place a spoonful of the mushroom mix in each quadrant and top with lamb medallion. Fold the corners up tightly around the lamb and mushroom mix

6. Brush each lamb wellington bite with the egg wash and sprinkle with flaky garlic salt. Add the baking sheet to the oven and cook until they start to lightly brown and the IT registers 130 degrees.

7. Serve w/ creamy Dijon or horseradish sauce and enjoy!
