Think sour cream and onion dip, but times 10000! Let me know if you prefer College Football or the NFL! 20oz Applewood Smoked Bacon 2 pounds yellow onions, diced 4 shallots, halved and sliced 1/2 cup brown sugar 1/2 cup balsamic vinegar 1/4 cup water, plus more as needed Salt & Pepper to taste 16oz sour cream (I love fage for dips) 2 scallions (green and whites) sliced/diced Add the diced bacon to a heavy bottom pot over medium heat. Cook, stirring occasionally until the fat renders and the bacon is crispy (10-15 minutes). Once crispy remove the bacon and set aside, saving a few tablespoons of the bacon grease. Heat the pot over medium heat, once hot add two tablespoons of bacon fat, the onion, brown sugar, balsamic, and water. Mix until fully combined. Then cover, and let the onions cook, untouched, for 15-20 minutes. Add the bacon back to the onions, and partially cover. Cook, stirring occasionally, until the onions achieve a dark brown jam like consistency (about 1 hour) When stirring, iff the onions appear dry and are sticking, add water a tablespoon at a time. Remove the onions and allow them to cool completely. Add the sour cream, green onions, and jam to a large bowl. Mix until fully combined, then transfer to the fridge to cool.
