🦃 Thanksgiving with a Twist Ep. 1: Maple Bacon Brussels Sprout Salad | Make and dress this salad the morning of, and let it soak in all those good flavors.

🥗Salad🥗
-1.5 lbs Brussels Sprouts 
-8oz applewood smoked bacon
-1/2 cup toasted nuts of choice 
-5oz pomegranate seeds 
-Salt & Pepper

🍁Maple Vinaigrette🍁
-1/3 cup maple syrup 
-3/4 cups white balsamic vinegar
-1/2 to 3/4 cup olive oil 
-2 tbsp whole grain mustard 
-3 garlic cloves, grated 
-Salt and pepper 

Add all the vinaigrette to a shaker or a base of a blender. Vigorously shake, or blend on high, until the vinaigrette emulsifies. Then set aside in the fridge. 

To quickly cook the bacon, preheat your oven to 400°. Line a sheet tray with parchment paper and lay out the bacon. Cook for 20 minutes or until crispy. When done, roughly chop. 

If you have whole Brussels Sprouts, clean them and shred. Using a sharp knife, cut them in half lengthwise. Then place the cut side down, and thinly slice from the top of the sprout towards the stem. 

Build the salad by adding the Brussels, toasted nuts of choice, pomegranate seeds, chopped bacon, and a generous pinch of salt and pepper. 

Pour about 2/3 of the dressing over the salad. Mix until combined and set in the fridge until you’re ready to serve. Right before serving, taste and adjust salt, pepper, and dressing as needed. Enjoy!
