🫑 Italian Stuffed Peppers 🫑 One of my favorite weeknight meals because it only involves 2 pots, it’s easy to make, and it comes together in about 30 minutes.

Also - scoop up that extra stuffing with some chips and you’ll have an awesome dip… you can thank me later 😌😌

Peppers
-4 bell peppers, cut in half
-Salt & Pepper
-Olive Oil
-Pecorino Romano
-Fresh mozzarella to top (I used galbanicheese sliced mozzarella and it was perfect to melt on top of the peppers)

Stuffing
-1/2 cup orzo, cooked
-1 yellow onion, diced
-4 garlic cloves, grated
-1 tbsp tomato paste
-1lb ground turkey or chicken
-1 tbsp fennel seeds
-1 tbsp ground coriander
-1/4 tsp red pepper flakes
-15oz of your favorite pomodoro (I actually used biancodinapolitomatoes Pizza Sauce for this recipe and it was perfect)
-2 to 3 handfuls of shredded mozzarella
-Fresh basil, torn
-Salt & pepper to taste
-Olive oil as needed

Preheat your oven to 400°. Drizzle the peppers with olive oil and season with salt and pepper. Bake for 20 minutes to soften up.

Cook your orzo for 3 minutes less than package instructions, then set aside.

Heat a pan over medium heat and drizzle with olive oil. Then add the onion and garlic and cook until fragrant and translucent. Then add the tomato paste and cook until deep red in color.

Add the turkey/chicken and season with salt, pepper, red pepper flakes, fennel, and coriander. Let the bottom sear and then break it up mixing it with the onions and garlic.

Add the cooked orzo and tomato sauce to the pan and mix until combined. Then take the stuffing off the heat and add the torn basil and shredded mozzarella. Mix until the cheese is melted.

Taste and adjust salt as needed.

At this point the peppers should be done. So stuff each pepper with as much stuffing as you’d like, then top with the fresh mozzarella, pecorino, and a drizzle of olive oil.

Transfer to the broiler and cook for 5-10 minutes until the cheese is melted and bubbly.
