This Oven-Baked Smoky Tomato Rice is one of those throw-it-in-a-dish-and-let-the-oven-do-the-work kind of recipes. I used petite diced tomatoes, a little smoked paprika, and some pantry staples to build BIG flavor with almost no effort. 🙌

So good as a base for shrimp, chicken, or just eat it straight from the dish like I did. 💁‍♀️
