This one’s extra special to me… it’s my take on the famous Alice Springs Chicken from Outback — where I worked back in my 20s as a bartender, server, and key employee (yep, hustled my way through college slingin’ bloomin’ onions and cold beers 🤪).

Tender chicken smothered in honey mustard, crispy bacon, sautéed mushrooms, and ALL the melty cheese — just like you remember from the restaurant, only homemade (and dare I say, even better).
