I had this fresh tomato salad at lefkes_delraybeach and immediately knew I had to recreate it at home! It was so simple but so bold—juicy tomatoes, red onion, Kalamata olives, and that briny punch from feta and capers. I added my own touch with herbs and a good glug of olive oil + red wine vinegar.

It’s rustic, it’s vibrant, and it’s the kind of dish that makes your whole table feel like a little Greek island. 🌿🍷
