🇰🇷🇵🇱Kimchi Pierogis & Ramyun?!

If a Polish grandma and an experimental Korean cook made a dish together, it might be this. Behold, the Kimchi Ramen Pierogi! Polish and Korean cultures have a lot in common... pickles/fermentation are a massive piece of the culinary cannon, both peoples eat soups year-round, cabbage is life (think kimchi and fermented cabbage) and of course, dumplings are big (think about the similarities between Korean Mandu and Polish pierogis). Considering Chicago is home to a massive Polish population (the largest outside of Poland) AND I grew up crushing @NongshimUSA Shin Ramyun on the regular, I figured we’d try something fun and exciting today to celebrate both cultures. Let’s do it. 

Pierogi Dough:
4 cups AP Flour
1/2 tsp Kosher saltalt
1 cup Water
2 Large Eggs

1. Mix salt and eggs into water, pour over flour. Mix dough until smooth, cover and rest 15 minutes before rolling out.

Pierogi Filling:
2 cups Kielbasa, small dice
2 cups Kimchi, chopped
1 medium Korean Sweet Potato, cooked and mashed
1 Packet Shin Ramyun Seasoning and Vegetables
1/4 pound Mozzarella Cheese, grated
1/2 tsp Kosher Salt, to taste

1. Mix everything in a large bowl, cover and set aside.

Technique:
1. Roll the dough out to a 1/4 inch sheet. Use a glass or cookie cutter to cut out 4 to 5-inch circles. Add a tablespoon of filling in each dough circle, then tightly seal the seems by hand. Set the pierogis aside once shaped.
2. To a large pot of boiling water, add a single flavor packet and a pinch of salt.
3. Add the pierogis to the water and cook until they rise to the top, 3-5 minutes. Carefully remove with a slotted spoon. Meanwhile, prepare your Shin Ramyun according to the directions on the back of the package.
4. Place a few of the finished pierogis over a steaming bowl of Shin Ramyun noodles. Garnish with sesame seeds, sesame oil, scallions, an egg and a dollop of sour cream.
