🇯🇵x🇺🇸Chicago-Style Taiyaki (Italian Beef + Giardiniera)

Taiyaki was born in Tokyo in 1909 when a dude turned sweet pancakes into lucky little fish cakes. Fast forward to 1930s Chicago, where Italian beef became a juicy, spicy sandwich legend. So naturally, Shota and I thought, why not mash them boys together? Sweet fish mold, savory beef filling, you get it. The recipe is below if you’re feeling spicy.

Ingredients
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp kosher salt
1/2 tsp sugar (optional)
1/4 tsp onion powder (optional)
1 egg
3/4 cup whole milk
1 Tbsp neutral oil (canola or grapeseed)
1/2 pound cooked Italian beef, finely chopped
1/4 cup au jus (juice from the beef or extra beef broth)
1/3 cup spicy giardiniera, chopped and drained
Black pepper to taste
Neutral oil, for greasing the pan

Technique
1. Whisk together flour, baking powder, salt, sugar (if using), and onion powder (if using) in a bowl.
2. In a separate bowl, beat the egg, then whisk in the milk and oil. Combine wet and dry ingredients into a smooth pancake-like batter, adding a splash of milk if too thick.
3. In another bowl, mix the Italian beef, au jus, giardiniera, and black pepper until cohesive but not overly wet. Drain if needed.
4. Preheat a taiyaki pan over medium heat and lightly oil both sides. Lower heat to medium-low once hot.
5. Pour 1 Tbsp of batter into each mold to coat the bottom.
6. Add 2–3 Tbsp of beef filling to the center of each mold.
7. Top with 1–2 Tbsp of batter to cover and seal the filling.
8. Close the mold and cook, flipping every 1–2 minutes for 3–5 minutes total, until golden brown and crispy. Let cool slightly and serve warm, optionally with extra au jus for dipping.
