🇰🇷Korean STUFFED Kimchi Rolls! 
On paper, cabbage rolls sound boring and sad. But a good, tight roll stuffed with meat, rice and aromats is a thing of beauty and elegance… because in my book, often times, “low-brow” food outclasses the fancy stuff. The recipe makes enough cabbage rolls for 4 peeps or 3 hungry peeps. Peep it. 🫡

Ingredients
1 Tbsp sesame oil 1 Tbsp neutral oil (like canola or vegetable) 1 small yellow onion, finely diced 1 Tbsp fresh ginger, grated 4 garlic cloves, minced 1 pound ground pork 1 cup cooked white rice 2 tsp soy sauce 1 tsp fish sauce 2 tsp gochugaru (Korean red pepper flakes), optional 1 egg, beaten 10-12 whole napa kimchi leaves (from 1 large jar of kimchi), excess liquid squeezed out 1 cup kimchi brine 1 cup chicken broth 1 Tbsp gochujang 1 tsp sugar 2 green onions, thinly sliced (for garnish) Toasted sesame seeds (for garnish)

Technique
1. Heat sesame oil and neutral oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add ginger and garlic, cooking for 1 minute until fragrant. Let cool slightly.
2. In a large bowl, combine ground pork, cooked rice, soy sauce, fish sauce, gochugaru, egg, and the cooled onion mixture. Mix until just combined—do not overwork.
3. Lay out kimchi leaves, patting them dry. Trim thick ribs if needed. Place 2-3 Tbsp of filling at the base of each leaf, then roll up tightly, tucking in the sides.
4. Nestle the rolls seam-side down in a snug baking dish or skillet.
5. In a bowl, mix kimchi brine, chicken broth, gochujang, and sugar until smooth. Pour over the rolls.
6. Cover the dish tightly with foil or a lid. Bake at 350°F (175°C) for 45 minutes until rolls are cooked through and sauce is slightly thickened.
7. Let rest 10 minutes before serving to allow flavors to settle.
8. Garnish with sliced green onions and sesame seeds. Serve with extra rice or simply as is.
