🇬🇷🐟Salmon Spanakopita! (Crispy Salmon Puffs)

Spanakopita is a top tier starter at any self-respecting Greek-American restaurant. They’re crispy with a gooey, warm interior usually filled with feta cheese and a few other simple ingredients. Today we’re “salmon-ifying” things and taking it to the next level. Would you?
 Serves: 6 (makes about 12 triangles)

Ingredients 2 Tbsp olive oil 1 small yellow onion, finely chopped 2 garlic cloves, minced 10 oz fresh spinach, roughly chopped 1 tsp kosher salt 1/2 tsp black pepper 8 oz cooked salmon, flaked 1/2 cup crumbled feta cheese 2 Tbsp chopped fresh dill 1 egg, lightly beaten 12 sheets store-bought phyllo dough, thawed 1/2 cup unsalted butter, melted

Technique
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large skillet, heat olive oil over medium. Sauté onion until soft, about 5 minutes, then add garlic and cook for 1 minute.
3. Add spinach, stirring until wilted. Season with salt and pepper and transfer to a colander to drain. Let cool, then squeeze out excess liquid.
4. In a large bowl, combine flaked salmon, feta, dill, and egg, then mix in the spinach-onion mixture.
5. Cut each phyllo sheet lengthwise into 3 strips. Keep unused sheets covered with a damp towel to prevent drying out.
6. Working one strip at a time, brush lightly with melted butter. Place about 2 Tbsp of filling at one end and fold corner to form a triangle. Continue folding like a flag to the end of the strip, sealing with butter.
7. Repeat with remaining strips and filling, arranging triangles seam-side down on the baking sheet.
8. Brush tops with more butter and bake for 25–30 minutes until golden and crisp. Cool for 15 minutes before serving.
