Salmon (NOT Chicken) Pot Pie!?

It’s cold out. You want something comforting. At least I do. Chicken Pot Pie is elite, we all know that. But Salmon Pot Pie? It’s really, really good too and you should try it. Don’t believe me? Peep it.

P.S. Play it safe and make 2 pie crusts for this recipe. Below includes the measurements for 1.

Short-Crust Dough Ingredients (makes 1 pie crust) 2 cups (250g) bread flour 2 1/5 sticks (205g) unsalted butter 1/3 tsp (3g) kosher salt 1/4 cup (70-85g) ice water

Technique
1. Freeze the mixing bowl, dry ingredients, and paddle attachment for 20 minutes. Chill water separately in the fridge.
2. Attach bowl to mixer and blend on low until the mixture resembles coarse sand with some clumps (5-10 minutes).
3. Shape dough into a puck on a floured surface.
4. Wrap in plastic and chill for at least 2 hours or overnight.
5. Roll dough to 1/8 inch thick before use.

Salmon Filling Ingredients 6 Tbsp butter
1 leek, sliced
1 fennel bulb, sliced thin
1 garlic clove, sliced
1 bunch Swiss chard,  blanched and chopped
1 cup peas 
1 sprig Fresh Thyme
1/2 cup Parsley, chopped ⅓ cup walnuts, toasted and chopped
1 cup all-purpose flour
2 cups whole milk, cold
2 cups Comte Cheese, grated
1 ½ pounds @bluehousesalmon, cubed Kosher Salt, to taste
Black Pepper, to taste

Technique
1. Sauté fennel, leeks, thyme, and garlic in butter over medium heat for 5-6 minutes.
2. Add Swiss chard and cook for 2-3 minutes. Season with salt and pepper.
3. Sprinkle flour and stir for 1-2 minutes.
4. Gradually add milk, whisking until thickened (3-4 minutes).
5. Stir in Raclette until melted.
6. Fold in salmon and cook for 2-3 minutes.
7. Add nuts, season, and cool.

To Assemble and Bake
1. Preheat oven to 400°F.
2. Grease a cast iron skillet and line with one crust.
3. Trim excess, leaving ½ inch for crimping.
4. Add filling and cover with the second crust, sealing edges.
5. Brush with egg wash (1 egg + 1 Tbsp water).
6. Cut slits for steam and bake 40-50 minutes until golden and bubbly.
