🎏Miso Salmon Savory Waffles!? (Taiyaki)

“Taiyaki” is a sweet waffle-adjacent treat commonly served at Street Stalls in Japan. Taiyaki is shaped like a fish, specifically a Sea Bream (Tai) which is said to bring good luck. The O.G. is filled with sweet red bean (Azuki) paste, but today we’re going to weave in some dank bluehousesalmon and make it savory. Why? Because dinner is better than dessert :) 🫡 Adam

Taiyaki Batter:
* 1 cup Cake Flour (125g)
* 3 Tbsp Cornstarch (25g)
* ½ tsp Baking Soda (2.5g)
* ½ tsp Baking Powder (2g)
* 1 ½ Tbsp Sugar (20g)
* ½ Tbsp Honey (10g)
* 1 Egg (50g)
* ⅔ cup Whole Milk (150g)
* Pinch of Kosher Salt

1. In a bowl, whisk cake flour, cornstarch, baking powder, baking soda, sugar, and salt. Set aside.
2. In another bowl, whisk egg, milk, and vanilla extract or ube flavoring if using.
3. Make a well in the dry ingredients and gradually whisk in the wet ingredients to form a smooth batter. Cover and chill for 30 minutes.

Miso Salmon Filling:
* 8oz Salmon Fillet
* 2 cups Dark Miso
* 1 Tbsp Soy Sauce
* 1/2 cup Mayo
* 1/2 bunch Chives, minced

1. Preheat oven to 400°F.
2. Fully coat salmon with miso, wrap in plastic, and refrigerate for at least 6 hours, preferably overnight.
3. Rinse miso off salmon and pat dry.
4. Bake salmon for 10 minutes until cooked through. Optionally, broil or torch for color. Let cool slightly.
5. In a bowl, flake salmon and mix with soy sauce, mayonnaise, chives, and a pinch of salt. Set aside.

Make the Taiyaki:
1. Preheat your pan on medium heat. Lightly oil the pan, then wipe with a paper towel, leaving a thin layer.
2. Add a thin layer of batter and cook until bubbles form.
3. Flip the pan and repeat. Add a tablespoon or two of the salmon mixture followed by a small dollop of batter. Close the pan and cook for 1 minute, then flip and cook for another minute.
4. Once taiyaki is slightly browned and set, place on a wire rack to cool slightly. Repeat with remaining batter and filling.
5. Enjoy your warm, delicious waffle fishy! <3
