MAYAK EGGS

6-8 whole eggs, room temperature 
1 tsp. vinegar + 2 tsp. salt

1/2 cup light soy sauce
1/2 cup water
1/4 cup granulated white sugar 
2 Tbsp. mirin
2 Tbsp. unseasoned rice or white vinegar
3 cloves garlic, minced 
1 Tbsp. toasted sesame seeds
2 stalks green onions, sliced
1 Tbsp. chopped fresh chilies (I like to use a combo of green & red jalapeños) 
Cooked white or garlic rice
Toasted sesame oil before serving 

Procedure:
1️⃣For the Jammy Eggs: In a saucepan, fill 2/3 full with water, splash of vinegar, & salt. This will ensure that the cooked eggs will peel easily. On high heat, bring to a boil. Using a large slotted spoon or strainer, gently drop the eggs all at the same time. Start your timer for 6 1/2 minutes. Keep it at a gentle rolling boil throughout the entire cooking time. After 6 1/2 minutes, scoop all the eggs out & drop it in ice water to stop the cooking process. Let it cool completely. Peel all the shell & set it aside.
2️⃣In another saucepan, combine together soy sauce, water, sugar, mirin, & rice vinegar. Bring to a boil or until sugar is dissolved. Turn the heat off. Add your garlic, sesame seeds, green onions, & chilies. Let the mixture cool completely. Place the mixture into a glass tupperware, gently drop your ramen eggs. Make sure it’s fully submerged in the soy mixture. Place the lid & refrigerated for at least 6 hours to marinate. You can turn the eggs halfway through to ensure even marination throughout the entire egg. 
3️⃣To serve: scoop warm white rice in a bowl. Place the egg on top & scoop some of the sauce over it. Drizzle w/ sesame oil.
