Simple Salmon & Basil Sauce!

I was inspired by the famous dish “Salmon with Sorrel Sauce” from French chef Pierre Troisgros. Pierre, along with his brother Jean, operated the renowned restaurant Les Frères Troisgros in Roanne, France for a long time.

For those who don’t know about it, sorrel is an amazing herb that is tart, tangy and slightly bitter. It’s often overlooked which is a bummer. Another issue is that sorrel isn’t always easy to find at your average grocery store (though Whole Foods does carry it from time to time.) Which is exactly why I swapped it out for basil because… everybody loves basil. But really, basil works gorgeously in this sauce and brings that herbaceous, kitchen-filling goodness that we all love it for. This recipe might seem old-school because, well, it is… it’s stood the test of time and I hope you dig it! 🤘🏼 Adam

Ingredients:
* Two 8oz bluehousesalmon Filets
* 1 bunch Fresh Basil, stems removed
* 3/4 cup White Wine
* 3/4 cup Fish or Light Chicken Stock
* 3/4 cup Heavy Cream
* 1/2 stick of Butter, unsalted and cubed
* Juice of half a Lemon
* Kosher Salt, to taste

Technique:
1. Carefully slice the salmon in half length wise to form 2 skinny pieces from each filet. Use parchment paper and a flat cooking mallet to gently pound the fish flat.
2. In a saucepan, combine the white wine and stock then bring to a simmer. Add the cream and reduce the mixture over low heat by about roughly 3/4 until thick, about 20 minutes.
3. When the sauce is reduced, cut the heat and whisk in the butter, a pinch of salt, the basil and lemon juice to taste. The sauce should be thick enough to coat the back of your spoon.
4. Heat a medium sized non-stick over medium heat for 2 minutes. Remove it from the heat and use a paper towel to brush in a thin layer of oil. Gently lay the salmon onto the pan and cook the salmon for 30 seconds on both sides. The salmon should be pale, pink and medium-rare on the inside with virtually no color from the pan.
5. To serve, spoon some sauce on the plate then carefully lay on a piece of cooked salmon. Garnish with more chopped basil and CRUSH!
