 Made lobster bisque from scratch, and it did not disappoint!  This rich, creamy bisque starts with homemade lobster stock, a flavorful blend of veggies and seasonings, and finishes with tender lobster meat. So good, so cozy.

Homemade Lobster Bisque

Ingredients:
* 2 lobster tails
* 2 tbsp butter
* 1 small onion, roughly chopped
* 1 carrot, roughly chopped
* 1 celery stalk, roughly chopped
* 3 cloves garlic, smashed
* 2 tbsp tomato paste
* 2 tbsp all-purpose flour
* ½ cup white wine
* 4 cups water
* ½ tsp salt
* ½ tsp black pepper
* 1 tsp Old Bay seasoning
* ½ tsp paprika
* 1 tbsp lemon juice
* ½ cup heavy cream
Instructions:
1. Bring a pot of water to a boil and cook lobster tails for 3-4 minutes until just opaque. Remove the meat, chop, and set aside. Reserve the shells.
2. Add lobster shells and 4 cups of water to the same pot. Simmer for 20 minutes, then strain and discard the shells.
3. In a large pot, melt butter over medium heat. Add onion, carrot, celery, and garlic. Cook for 5-7 minutes until softened.
4. Stir in tomato paste and cook for another minute. Sprinkle in flour, stirring to coat the veggies.
5. Pour in white wine, stirring to lift any bits from the bottom of the pot. Add strained lobster stock, salt, pepper, Old Bay, and paprika. Simmer for 10 minutes.
6. Use an immersion blender (or transfer to a blender) and blend until smooth. Stir in lemon juice and heavy cream.
7. Add the chopped lobster meat back into the bisque. Let it warm through, then serve immediately. Enjoy!
