Ingredients:
* 4 (4-ounce) fresh sea bass fillets, about 1 inch thick
* ⅓ cup sake
* ⅓ cup mirin (Japanese sweet rice wine)
* ⅓ cup miso paste (white or yellow)
* ¼ cup packed brown sugar
* 3 tablespoons soy sauce
* 1 tsp fresh garlic, minced
* 2 tablespoons chopped green onion (for garnish)
Instructions:
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a small saucepan, combine the sake, mirin, miso paste, brown sugar, soy sauce, and minced garlic. Cook over medium heat, whisking until the sugar dissolves and the mixture becomes smooth. Remove from heat and let it cool slightly.
