There’s nothing like ricotta and spinach stuffed shells to bring everyone together. Fresh ingredients, simple steps, and a whole lot of love. Perfect for any occasion, and trust me, your guests will be asking for seconds!

Ricotta and Spinach Stuffed Shells
Ingredients:
* 1 box (12 oz) jumbo pasta shells
* 2 cups ricotta cheese
* 1 cup shredded mozzarella cheese (plus extra for topping)
* 1/2 cup grated Parmesan cheese
* 1 egg
* 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
* 2 cups marinara sauce (store-bought or homemade)
* 2 cloves garlic, minced
* 1 teaspoon dried basil
* 1 teaspoon dried oregano
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* Fresh basil or parsley for garnish (optional)

1. Preheat your oven to 400Â°F (200Â°C).
2. Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to the package instructions until al dente. Drain and set aside to cool.
3. In a large bowl, combine 2 cups ricotta cheese, 1 cup shredded mozzarella cheese, 1/2 cup grated Parmesan cheese, 1 egg, 2 cups chopped fresh spinach (or 1 cup thawed and drained frozen spinach), 2 cloves minced garlic, 1 teaspoon dried basil, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well until all ingredients are thoroughly combined.
4. Spread 1 cup marinara sauce on the bottom of a large baking dish.
5. Fill each cooked shell with the ricotta and spinach mixture, and place them in the baking dish, open side up.
6. Once all the shells are stuffed and arranged in the dish, pour the remaining marinara sauce over the top.
7. Sprinkle extra shredded mozzarella cheese over the shells.
8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
9. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and starts to brown.
10. Remove from the oven and let cool for a few minutes. Garnish with fresh basil or parsley if desired. Serve hot and enjoy!
