We’re celebrating National English Muffin Day so we’re making the most decadent brunch - thisdelicious twist on eggs Benedict, Lobster Benedict, with wolfermans bakery.

It’s surprisingly simple, with a toasted English muffin, fresh arugula, a poached egg, poached lobster tail, topped with pepper, brown butter, and lemon zest. You can find Wolferman’s bakery products by checking out the link in my bio , and you can find the full recipe below. Enjoy!

Ingredients:
* 4 English muffins, split and toasted
* 8 oz cooked lobster meat, chopped
* 4 large eggs
* 2 cups fresh arugula
* 4 tablespoons unsalted butter
* Salt and pepper to taste
* Lemon zest for garnish
* Fresh chives or parsley for garnish (optional)
Instructions:
* 	Poach the eggs: Bring a pot of water to a gentle simmer. Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and carefully slide the eggs into the center. Poach for about 3 minutes for a soft yolk. Remove with a slotted spoon and drain on a paper towel.
* 	Assemble the Lobster Benedict: Place toasted English muffin halves on serving plates. Top each half with a handful of fresh arugula.
* 	Distribute the chopped lobster meat evenly over the arugula on each muffin half.
* 	Carefully place a poached egg on top of the lobster meat on each muffin half.
* 	In a small saucepan, melt the unsalted butter over medium-low heat until it turns golden brown and develops a nutty aroma, about 3-4 minutes. Be careful not to burn the butter.
* 	Drizzle the brown butter generously over each egg, allowing it to coat the muffins and lobster.
* 	Sprinkle freshly cracked black pepper over the top and garnish with lemon zest and fresh chives or parsley if desired.
* 	Serve immediately and enjoy your deliciously simple Lobster Benedict for a special brunch celebration!
