Here are my tips and tricks to hopefully set you up for success the next time you make spring rolls! 

1. Rice Paper: The Three Ladies brand is my go to because I feel like they have more structural integrity. I will say most of the rice paper brands you will find at an ASIAN grocery store should have similar if not the same structural integrity though! 

2. Banh Hoi: These are woven vermicelli. I don’t have a brand preference. I just happened to have Three Ladies brand also. I like using these because even after cooking they stay in a nice bundle. It makes it easier for guests to grab noodles and in my opinion it is cleanlier since you don’t need to fight to separate bunches of noodles. I also like how easy and quick they are to prepare! 

3. Thinly slicing your ingredients: I’ve always found it makes rolling easier if you prepare firmer ingredients thinly or into matchsticks. I even slice the protein thinly (ex. Shrimp sliced in half). 

4. What ingredients do I use? Typically I will do shrimp and pork belly for protein, banh hoi, mint, thai basil, perilla, cucumbers, and lettuce for vegetables/herbs. However, you can always use your favorite ingredients because they are YOUR spring rolls : ). Like here I used a bunch of ingredients I got at the farmers market. 

5. Soaking the Rice Paper: I use lukewarm or cold water to soak the rice paper. This way it does not soften too quickly. Why does that matter? If the rice paper is too soft it makes rolling challenging — the rice paper can easily tear or it’s just so sticky. 

6. STORAGE! If I’m storing for a longer period of time (>3 hrs), I find wrapping the rolls in a large lettuce leaf before placing side by side in a container to be an easy and tasty way to avoid using plastic. If I’m storing for a short period (<3 hrs), I have not had an issue lining them up besides one another.
