Our Fresh Peach Pie is the perfect late-summer dessert, but a few precautions are necessary to ensure that the juicy fruit doesn’t lead to a soupy pie. After draining some juices, pectin and cornstarch are added to the peach filling mixture to help thicken it, while an open lattice crust helps some moisture to evaporate while baking.
