Easily one of my favorite things to make on the griddle.

You don’t even a recipe, just cut up a few chicken thighs, add some red onion, olive oil and season with my AP rub. Toss everything on the griddle over high heat, cook and finish with bbq sauce and a few slices of cheese. That’s it! It doesn’t get any easier than this. Pile it on high on some French rolls and your sandwich is ready to go!
