Our recipe for Skillet-Roasted Chicken in Lemon Sauce is inspired by Rao’s in New York City. We wanted to achieve similar flavor without the luxuries of restaurant kitchen equipment, and did so by browning the skin in a skillet and then braising the chicken in the oven.
