## Caption

This salad is perfect for bringing to work, thanks to its multitasking dressing. Many types separate or congeal when refrigerated, but we were able to avoid those common issues. Using a bit of vegetable oil in addition to olive oil prevents the molecules from solidifying, while mustard and molasses help to emulsify and stabilize the mixture.
