## Caption

Tomatoes right now are sweet and juicy, but that can lead to a soggy tart. We found some important precautions to avoid this common issue. To provide a layer of protection, and flavor, between the crust and tomatoes, we used a mixture of Parmesan, ricotta, and mozzarella.
