To ensure deep flavor for our Ultimate Pub-Style Burger we hand-grind beef. We start with sirloin tips for our recipe, cutting the meat into chunks and partially freezing before pulsing to a coarse grind in the food processor. Next, we gently work melted butter into the ground meat to ensure a juicy burger and encourage browning.  We used a combination stove-oven technique, in which the intense heat of the burner produced a great crust and the gentler, more ambient heat of the oven produced juicy, perfectly burgers.
