Today's #CIEditorsPick: #Poached Fish Fillets with Sherry-Tomato Vinaigrette.

We adapted the restaurant-style technique of poaching #fish in liquid and gently cooking it at below simmer temperatures while still promising super-moist, delicately cooked fish. With placing half an onion in the skillet and arranging the fillets around it we were able to displace some of the oil and shallow-poach the fillets in just 3/4 cup of oil.
