For a quick weeknight pasta sauce, we balance garlic’s sweet and fiery sides and then add a few pantry staples—all in the time it takes to boil spaghetti. To ensure a cohesive sauce that's not oily, we cooked the pasta in just 2 quarts of water so that the pasta cooking liquid has enough starch to bind the oil to the noodles when added back to the spaghetti.
