OHHH MY GOSH! This might be my new favorite recipe in the series. This Broccoli Cheddar Turkey Skillet has that classic broccoli cheddar flavor you know and love but it’s actually so nourishing and protein packed. Plus it could not be easier to make! I have a feeling you guys are going to loooveee this one (we sure do!). Serves 4 Total Time: 25 minutes Ingredients: 1 tablespoon olive oil 1 small yellow onion, diced 2 garlic cloves, minced 1 pound ground turkey, preferably 93% lean 1 teaspoon kosher salt 1 teaspoon paprika 1/4 teaspoon red chili flakes 1/4 teaspoon black pepper 1 1/2 cups frozen/precooked brown rice (1 bag from Trader Joe’s) 3 cups broccoli florets, roughly chopped into bite size pieces 1/2 cup chicken broth or water 1 cup shredded cheddar cheese 1/3 cup sour cream or Greek yogurt, optional Chopped parsley to top, optional Instructions: Heat the olive oil in a large, deep skillet with a lid over medium heat. Add the onion and garlic and cook, stirring occasionally, for 5-7 minutes or until the onion has softened. Increase the heat to medium-high and add the ground turkey. Using a meat masher or wooden spoon, break up the ground turkey as it browns. Once it has just cooked through, about 5 minutes, add the seasonings, rice, broccoli, and chicken broth/water. Stir to combine then cover and cook over medium-low heat for 8-10 minutes, or until broccoli is tender and the liquid has absorbed.* Stir in 1/2 cup cheese and the sour cream or Greek yogurt until combined. Season to taste. Top with remaining cheese and cover until melted, about 2 minutes.. Top with parsley and serve hot! *If the broccoli is tender and there is still liquid in the pan, remove the lid and increase the heat to medium-high, stirring occasionally until the liquid has evaporated. #broccyourbody #easyrecipes #healthyrecipes #highprotein #traderjoesrecipes #mealprep #broccolicheddar #fallrecipes #cozyrecipes #weeknightdinner
