## Caption

We made a few changes to traditional blintz recipes to make them easier to create at home. Farmer’s cheese can be hard to find, so we chose a mix of whole-milk ricotta and cream cheese. Luckily, a special crêpe pan is not necessary, as a traditional skillet works just fine. A drizzle of homemade raspberry sauce adds an extra sweetness and a pop of color.
