Got leftover potatoes that were never cooked up on Thanksgiving? Use them to make our crispy Mashed Potato Cakes. We use russet potatoes to ensure fluffy cakes and add just one egg yolk, some parmesan cheese, and fresh chives to complete the mixture. Recipe link in profile.
