Easier Fried Chicken—our foolproof recipe for this cast iron classic. To get a perfect light brown crust on our chicken we first shallow fry the bone-in pieces. To finish cooking, we then move the chicken to a hot oven, getting all the benefits of frying without any danger of burnt coating or undercooked chicken.
