This week in the test kitchen #CooksCountry test cook Katie Leaird transfers cut-out shapes of ginger-spiked, molasses-sweetened dough to a parchment-lined baking sheet while preparing a batch of gingerbread #cookies for a tasting. 
Katie's out to steer these cookies away from decoration and back into the realm of confection, churning out batch after batch in order to arrive at a recipe that yields real ginger-and-spice flavor while achieving the perfect textural balance between chewy and crisp.
