You probably already know this trick, but I still feel like sharing it 🥖✨ I’m so often left with half a stale baguette, and instead of tossing it, I slice it up, drizzle with olive oil, sprinkle some herbs + salt, and bake. In 15 minutes you’ve got the crunchiest little crostini crackers. Perfect with cheese, dips, or honestly just on their own. My kid is obsessed with them.

Bruschettini Crackers

Servings: About 24–30 crostini (depending on baguette size)
Prep Time: 10 minutes
Cook Time: 12–15 minutes

Ingredients:
	•	1 baguette (day-old works best)
	•	3–4 tbsp olive oil
	•	1 tsp garlic powder (optional)
	•	1 tsp dried Italian herbs (oregano, thyme, rosemary, basil)
	•	Sea salt, to taste
	•	Freshly cracked black pepper, to taste

Instructions:
	1.	Preheat oven to 375°F 
	2.	Slice the baguette into thin rounds, about ¼ inch thick. Try to keep them uniform for even crisping.
	3.	Arrange slices on a baking sheet in a single layer.
	4.	Brush or drizzle with olive oil, making sure each piece is lightly coated.
	5.	Season with garlic powder, herbs, salt, and pepper.
	6.	Bake for 12–15 minutes, flipping halfway, until golden and crisp.
	•	Keep a close eye near the end—they can go from golden to burnt quickly.
	7.	Cool completely on a wire rack (they’ll crisp up more as they cool).

Storage: Store in an airtight container at room temperature for up to 1 week.
