Considering #Coca: We're sifting through several versions of this #Spanish flatbread to find our own way. 
Book team test cook Amanda Rumore slices a flatbread topped with sautéed onions, zucchini and tomato into tasting-sized portions as several other loaves sit ready for consideration ahead of a taste test of five different takes on coca. This Spanish flatbread, the name of which shares roots with the English word "cake", represents a wide variety of yeasted goodies in the Catalan region: some savory, some sweet; some simple, some decked-out with all sorts of toppings. Amanda's sticking with the savory side of coca for this tasting, opting to include samples decorated with #Mediterranean goodies like pine nuts and roasted peppers. 
Look for her take on coca in an upcoming cookbook dedicated to yeast breads and baking, due out next year.
