#Stollen Goods: We're bringing a classic #German winter bread in from the cold. 
Book team test cook Afton Cyrus uses a fine mesh strainer to dust loaves of stollen with powdered sugar on her in-progress recipe for this Christmas bread. First hailing from Germany, stollen was originally composed of just three ingredients: flour, oats, and water. Over hundreds of years, it has evolved from a simple bread into an ornate winter spectacle, featuring such additions as dried fruit, nuts, warm spices, and occasionally, a rope of marzipan that runs the entire length of the loaf. With so many possible ingredients in play, however, stollen can run the risk of falling into the dreaded holiday fruitcake trap, potentially turning out dense and leaden and resulting in a bread that's a chore to consume when it really ought to be a celebration. 
Afton's got her work cut out for her when it comes to reining in excess and developing a winning take on stollen: look for her recipe in an upcoming book dedicated to all things bread-baking, due out next year.
