🐔 The Best Crispy Chicken Marsala | We’re back with another Italian Classic, but make it crispy. Yes, crispy! This Chicken Marsala will be one of the best Marsala dishes you’ve had, and it’s all thanks to the crispy chicken cutlets that takes this dish to another dimension. 

🐔 Chicken 
2 pounds of chicken breasts, thinly sliced 
2 eggs, whisked 
Breadcrumbs of choice 
Salt & pepper 

🍷 Marsala Sauce 
4-5 tbsp butter (2 tbsp for 🍄‍🟫 + 2-3 tbsp to finish)
1 large shallot, finely minced 
3 garlic cloves, grated 
8oz mushrooms of choice (I use wild mushroom packs)
1 sprig rosemary 
2 cups of a good, imported Marsala wine 
1/2 cup chicken stock 
Parsley, for garnish
Salt & pepper 
EVOO

Cut your chicken super thin and season with salt and pepper. Then bread your chicken as you normally would, and fry until golden brown and crispy. Remove and immediately season with a touch of salt then set aside. 

Heat a high wall pan over medium heat. Drizzle with EVOO and add 2 tbsp of butter. Add the mushrooms and cook until the mushrooms are browned and slightly caramelized. Then add the shallots, garlic, and a pinch of salt. Cook until fragrant. 

Lower the heat off and add the sprig of rosemary and Marsala wine. Then turn the heat to high and simmer until it reduces by half. Once reduced add stock to the pan. Cook for an additional 10-15 minutes on a low simmer until the sauce reduces to a desired consistency. 

One the sauce is done, remove from the heat and stir in 2-3 tbsp of cold butter until the sauce is fully emulsified. 

Plate your chicken cutlets and pour the sauce directly over the top. Garnish with chopped parsley and enjoy!
