CRISPY WONTONS WITH YUZU MAYO SHRIMP
For shrimp filling:
1 lb large shrimp, peeled and deveined
6 tbsp Hellmann’s® Real Mayonnaise
1 tbsp chilli garlic sauce – see note
2 tsp yuzu juice
1 tsp rice vinegar
½ tsp kosher salt (1 tsp if using Diamond Crystal)
1/8 tsp white pepper
For wontons:
½ lb 3” wonton wrappers
Chives for tying
3 C high heat oil for frying
For dipping sauce:
¼ C Hellmann’s® Real Mayonnaise
1 tbsp honey
1 tsp soy sauce
1 tsp yuzu juice

Place shrimp filling ingredients in a small food processor and pulse until mixture is partially chopped with visible chunks of shrimp i.e. NOT pureed smooth. Refrigerate to marinade 15 minutes. Meanwhile mix dipping sauce ingredients together and set up wonton wrapping station – a tray, small dish of water and kitchen towel. 

To form wontons, dampen wrapper 1/3” from the edge. Place 2 teaspoon of lightly-packed filling in the center. Pull corners up, pinching firmly right above filling to seal and tie with a small piece of chive. Cover with kitchen towel to prevent drying while repeating with the rest.

Heat oil on medium heat to 350f or when bubbles rise rapidly up the sides of a wooden chopstick. Fry wontons in batches 3-4 mins or when golden. Transfer to paper towel-lined tray to absorb excess oil, then onto cooling rack so bottoms stay crispy. Serve with dipping sauce. Makes 45 wontons.

Note: I use Chinese preserved garlic chili garlic sauce. Alternatives include Sambal Oelek, gochujang, Thai sweet chili sauce, sriracha or any other chili sauce you enjoy!
