RECIPE NOTES:

⊹ Fresh Ontario ricotta is the secret weapon for these tender meatballs! 
⊹ Whether you have the last tomatoes and peppers to use up or you’re making this during the off-season, roasting them deepens their flavour and brings life to them. 
⊹ The cooking technique for the orzo is somewhat similar to risotto except it takes less than half the time (about 10 minutes) to cook. Gotta love that!

INGREDIENTS:

For the Chicken Meatballs:
1 lb ground chicken
½ C Ontario ricotta cheese
½ C fresh parsley, finely chopped
½ C grated Ontario parmesan cheese
2 garlic cloves
½ tsp kosher salt, more to taste
¼ tsp onion powder
Black pepper or white pepper, to taste
Oil for cooking

For the Roasted Tomato Pepper Orzo:
¾ lb tomatoes
1 red bell pepper
4 garlic cloves, separated
3 sprigs of fresh thyme
1 tbsp oil
1 tbsp Ontario butter
½ small white onion, small diced
½ tsp dried chili pepper flakes
1 lb uncooked orzo 
3½ C chicken broth (or enough to top up roasted tomato/pepper puree from above to a total of 5½ cups)
Salt and pepper to taste

For serving:
¼ C grated Ontario parmesan cheese
¼ C chopped fresh parsley
