This quickie comes in clutch and my family always slurps it up with enthusiasm! It’s inspired by my dad’s scallion noodle soup that has TONS of scallions, with the addition of some Dan Dan Mein vibes 🤌

📝 tips:
• you can sub ground chicken or turkey, or omit the meat for a meatless version 
• tahini or Chinese sesame paste can be used in place of peanut butter
• blanch quick-cooking leafy greens when cooking noodles for an easy addition of greens (baby gai lan pictured, baby bok choy, spinach, etc)
