MANDARIN UPSIDE DOWN CAKE. Can’t stop chugging drinkspindrift’s new Yuzu Mandarin flavor — it’s so bright, juicy, and refreshing that it inspired me to bake a little mandarin upside down cake to celebrate!! I used a dry caramel this time which gives you little bits of crunchy caramel-coated mandarin segments when you flip it out. Very moist!! Very fresh!! Very much the perfect pairing with a Spindrift! #SpindriftPartner 

Mandarin Upside Down Cake
Makes 1 (9-inch) cake

For the Fruit:
Nonstick cooking spray, for greasing
4 medium mandarin oranges, peeled and separated into segments
3/4 cups granulated sugar

For the Cake Batter:
1/2 cup granulated sugar
1/2 cup light brown sugar
4 large eggs
1 cup olive oil 
3/4 cup Greek yogurt (any fat %)
1/4 cup mandarin orange juice (from 2 oranges)
2 teaspoons mandarin orange zest (from 2 oranges)
1 teaspoon vanilla extract 
2 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder

1. Prepare the fruit: Preheat oven to 350°F. Grease a high sided 9-inch cake pan with cooking spray and line with parchment. Line the bottom of the pan with concentric circles of the mandarin segments.
2. In a medium saucepan, add the sugar over medium-high heat. Cook, stirring often to break up any lumps, until an amber caramel forms, 4-6 minutes. Immediately pour over the fruit in an even layer.
3. Make the cake batter: In a large bowl, whisk the sugars and eggs until pale yellow, then whisk in the olive oil, yogurt, orange juice, orange zest, and vanilla until smooth.
4. Add the flour, salt, baking soda, and baking powder to the bowl and fold until just incorporated, then pour over the caramel-coated mandarin segments. Bake until the top is golden and the cake reaches an internal temperature of 190°F, 50 to 55 minutes.
5. Let cool 15 minutes, then run a paring knife along the edges of the cake. Place a plate over the cake pan and invert, discarding parchment paper. Let cool slightly, then slice and serve warm.
