One word to describe México: food❗️

Ok, you can find food and good food in many parts of the world, but México is the only place I’ve been to where GOOD food is present in every single corner 24/7. From the ladies cooking enchiladas in their garage, to taquero frying tacos in a stand in the middle of the road, to the restaurant selling pozole blanco at midnight. Even the dead return  to the land of the living once a year to eat their favorite food. 

The gastronomical food tradition of México isn’t new, pre-Hispanic cultures ate chapulines (grasshoppers), escamoles (ant’s eggs) and guacamole. With the arrival of the Spanish, food traditions mixed and one of my favorite dishes in the world appeared, mole, a sauce that can take up to 48 hours to prepare and that has its origins in Iran via Al Andalus. 

History of food is also so interesting! Did you know that tacos al pastor were invented by the Lebanese community that moved to México in the 19th century? Since they didn’t have enough flour to make pitta bread, they had to improvise with tortillas and a decadent delicacy was born!
