Ingredients

Chicken & Vegetables
1 ½ lbs boneless, skinless chicken thighs or breasts
4 tbsp extra-virgin olive oil, divided
6 garlic cloves, finely chopped or grated
2 tbsp chopped fresh oregano or jar
1 tbsp orange zest
1 tbsp lime zest
1 tsp ground cumin
½ tsp cayenne pepper
Kosher salt (or regular salt), to taste
Freshly ground black pepper, to taste
1 medium yellow onion, sliced
2 russet potatoes, sliced into wedges
	

Herby Citrus Sauce
⅓ cup extra-virgin olive oil
¼ cup fresh orange juice
¼ cup fresh lime juice
¼ cup fresh cilantro, chopped
¼ tsp crushed red pepper flakes
Kosher salt, to taste

Smashed Avocado Salsa
1 avocado, diced
¼ cup fresh cilantro, chopped
2 green onions, sliced
2 tbsp fresh lime juice
Kosher salt, to taste
