Salads do not have to be an afterthought. Especially when littleleaffarms greens are involved  #ad
And a seasonal salad could absolutely be a centerpiece for a delicious meal!  The stars of this salad are maple roasted pears and a pumpkin seed brittle making this sweet, salty, savory and deliciously seasonal. 
 
Once you have the pears and the brittle made, it is just a matter of assembling the salad over a gorgeous bed of littleleaffarms greens 🥗 🥗

This salad is easily customizable based on what your likes are. I served it with some grilled chicken but it’s just as good on its own.  Feel free to change out the cheese or the nuts to something you prefer better! 
 
Roasted Pears: 3 firm pears (any pear will work) cut into 8 equal pieces (Do not peel)
2 tbls of olive oil
2 tbls maple syrup 1 tsp kosher salt
1/2 tsp black pepper
 
Pre-heat oven to 400F. Line a baking sheet with parchment. 
Place pear slices on the baking sheet and drizzle with olive oil, syrup, salt, and pepper. Toss to evenly coat well.  Bake for 20 minutes.  Pears should be completely tender and just beginning to caramelize . Remove from the oven and let them cool. These could be made a day in advance. 
 
Pumpkin seed brittle:
1 cup shelled pumpkin seeds
1/4 cup granulated sugar
1/4 tsp salt 
 
Heat a large skillet over medium-high heat. Toast pumpkin seeds, stirring frequently, until fragrant and just starting to brown and pop, about 5 minutes. Transfer to another plate and let cool. 
Return skillet to medium heat. Pour in sugar, shaking pan so it settles in an even layer. Cook, undisturbed, until sugar melts and is deep golden brown, 4 to 6 minutes. Remove from heat. Using a heatproof spatula, stir in pumpkin seeds and 1/4 teaspoon salt. When pumpkin seeds clump together with sugar, transfer to plate and let cool until cool enough to handle. Break into small, bite-sized pieces.
 
Lemon-Maple Vinaigrette:
1/4 cup lemon juice
1 tablespoon dijon mustard
2 tablespoons maple syrup
1 teaspoon ground pepper
pinch red pepper flakes
1 cup olive oil
Combine all in a jar with a lid and shake well until everything is fully mixed.
