My daughter Marcelle made a batch of these energy bites that she got from Ingrid thecozyapron. She brought some over to the House and my husband almost ate the entire batch.  Obvi I knew I needed to make them for the squad and sort of haven’t stopped making them.  They are a perfect no-bake treat filled with all the good things and they are easily customizable.  I’ve switched out nuts and dried fruit based on what I had in the House.  Thank you Ingrid for the inspiration and for such a terrific recipe!

Energy Bites

1/2 cup natural creamy peanut butter (I love Teddies PB) 
1/4 cup honey
2 tsp pure vanilla 
1/2 tsp kosher salt
1/4 tsp cinnamon
18 pitted dates
2 tbls water 
1 1/2 cups old fashioned rolled oats
2 tbls whole flax seeds
1/2 cup dried cranberries 
1 cup cashews, chopped 
1/2 cup roasted and unsalted pistachios, chopped
¼ cup unsweetened shredded coconut (I never usually have this so often don’t use it)
1 cup dark chocolate chips or
1 tsp coconut oil or any neutral oil 

In a small bowl, combine the peanut butter, honey, vanilla, salt, and cinnamon, and stir to combine. Set aside 
Add the dates and water to a food processor and process until they become a chunky paste. Set aside. 
In a large bowl, add the oats, flax seeds, cranberries, cashews, pistachios and shredded coconut, and toss well to combine. Then, add in the date paste and the peanut butter/honey mixture, as well, and using a spatula, mix everything together until very well combined. The mixture will be sticky. 
Roll the mixture into balls and place onto a parchment-lined baking sheet.  Rolling is much easier when you wet your hands. 
Once they all are rolled, place them in the fridge to set up and firm up for 30 minutes. 
Meanwhile in a bowl set over a pot of simmering water, combine the chocolate and oil.  The heat of the simmering water will melt the chocolate until nice and smooth. 
To coat the energy bites, dip the balls into the melted chocolate halfway and then place on the baking sheet. I let them sit on the counter until the chocolate hardens.  Sprinkle with a little course salt and store in the refrigerator.
